About the Founders
From Rome to Massachusetts
Giulio’s culinary journey began in Italy, learning fresh pasta from his grandmother, Nonna Lina, outside Rome. After formal training in Rome, he moved to Massachusetts, where he and his wife Carol founded Seven Hills Pasta Co. in 2016, producing bronze-extruded, slow-dried artisan pasta. Their work has since expanded into sustainable farming, fighting food insecurity in their community, and establishing chestnut orchards in both Massachusetts and Italy.

Across our agroforestry chestnut orchards, our soon-to-be Italian agritourism farm, and Boston cooking studio, we remain dedicated to quality, tradition, and sustainability. Everything we create, from pasta to farm-grown ingredients, to educational experiences—is crafted with intention and respect for people and the land.
