Something delicious is in the works—stay tuned for our upcoming culinary class!

Seven Hills Farmstead

Mastering Fresh Pasta: From Flour to Fettuccine

Just flour and eggs.

The beauty of making pasta rests in its genuine and radical simplicity. This class will give you the skills and confidence to make your own dough and shape it into your favorite pasta shapes just like an experienced Italian “nonna.”

Not only will you learn the craft and technique, but we will explore the traditions and foodways that gave rise to different flour mixes and interesting shapes from the north to the south of Italy.

Our classes are unique as they rest on a balance between learning proper technique and enjoying the conviviality of a shared meal. Evenings at Seven Hills Farmstead are meant to be relaxed, informative, and most importantly delicious!

Mastering Fresh Pasta is designed for anyone who has ever wanted to make fresh pasta at home but didn't know where to begin. Students will learn to mix, knead, rest, roll, and shape their own dough before transforming it into a classic fettuccine.

We will pair the pastas you make with two celebrated pasta preparations: the rich, slow-cooked ragù of Bologna and the deliciously simple butter-and-Parmesan sauce made famous by Alfredo di Lelio in Rome.

And, as always at Seven Hills Farmstead, we'll finish by gathering around the table to enjoy the fruits of our labor.

Menu

Fettuccine all'Uovo

Fresh egg pasta made from scratch, hand-rolled and cut into delicate ribbons.

Ragù alla Bolognese — Emilia-Romagna

Fettuccine all'Alfredo — Lazio

The original Roman preparation of fresh fettuccine tossed with butter and Parmigiano Reggiano, creating a silky, creamy sauce without the addition of cream.
